Just stick some cut up chicken on the skewers along with your favorite vegetables and grill them up. Coat them with some teriyaki marinade and grill them to perfection. You can also have beef kabobs. Serve these along with some salads, some grilled veggies, rice and maybe some glazed pork. Make sure to give each of your dishes an authentic Hawaiian food name like Kahlua Pork, Tiki Tiki Chicken, Hawaiian Rice Pilaf or Poi and that will get everyone in the Hawaiian mood. Add a couple Pina Coladas to the mix and you've got Hawaii in your own yard. Of course if this is a family style luau just serve virgin coladas.
When we are talking desserts for a Hawaiian Luau my mouth starts to water. Serve up fresh cut up fruit on skewers for fruit kabobs. Or fix up a platter filled with fresh cut up fruit, pineapple especially, along with a dip made of yogurt and marshmallow Fluff. Perfection would be a volcano cake and you can make that in two different ways. Make an entire volcano cake the real way or serve a sheet cake with a smaller cake or cupcake on top and decorate it to look like a volcano. You can even have some entertainers come in and do a little authentic hula dance routines and maybe even a fire dancer.
