You do need some delicious food for any adult party theme you host. It does not have to be fancy food but it does have to be tasty. The ideal easy food recipes for a Luau are kabobs. Just stick some cut up chicken on the skewers along with your favorite vegetables and grill them up. Coat them with some teriyaki marinade and grill them to perfection. You can also have beef kabobs. Serve these along with some salads, some grilled veggies, rice and maybe some glazed pork. Make sure to give each of your dishes an authentic Hawaiian food name like Kahlua Pork, Tiki Tiki Chicken, Hawaiian Rice Pilaf or Poi and that will get everyone in the Hawaiian mood. Add a couple Pina Coladas to the mix and you've got Hawaii in your own yard. Of course if this is a family style luau just serve virgin coladas.

When we are talking desserts for a Hawaiian Luau my mouth starts to water. Serve up fresh cut up fruit on skewers for fruit kabobs. Or fix up a platter filled with fresh cut up fruit, pineapple especially, along with a dip made of yogurt and marshmallow Fluff. Perfection would be a volcano cake and you can make that in two different ways. Make an entire volcano cake the real way or serve a sheet cake with a smaller cake or cupcake on top and decorate it to look like a volcano. Either cake will get eaten up by your Luau crazed party guests, so get baking! There is also a very tasty Hawaiian Wedding cake that is easy to prepare and bake. There are also fruit dishes like Ambrosia that would fit in with this Hawaiian party theme.

Get the limbo stick out and start up the Hawaiian music because it ain't a party without some fun, fun, fun games! A hula dancing competition would also be the ideal party game. And the hula competition will give Mr. You Know Who a chance to do his special party dance wearing his grass skirt. You want to make sure he gets a chance to show off his dancing talents. Most of us are looking for ways to serve our families healthy, nutrious meals without breaking our budgets. The cost of groceries have skyrocketed making it more and more difficult to put tasty, imaginative meals on the table. We have pulled together a menu that will help you to create a great, tasty meal without breaking the bank. For a different entree, try this Mozzarella-Stuffed Meatloaf with Mashed Cauliflower, Fresh Green and Yellow Bean Salad, and a light and tasty finish of Diabetic Friendly Ambrosia.

MOZZARELLA-STUFFED MEAT LOAF

1 1/2 lb lean ground beef
1 jar (approx 26 oz) Chunky Garden-style Pasta Sauce
1 large egg, beaten lightly
1/4 cup plain dry bread crumbs
2 cups shredded mozzarella cheese
1 tbsp fresh parsley, finely chopped

Preheat oven to 350 degrees.

In a large mixing bowl, combine ground beef, 1/3 cup of the pasta sauce, egg and bread crumbs. Season with salt, pepper, garlic, if desired. On a large piece of waxed paper, shape mixture into rectangle approximately 12x8-inches. Sprinkle 1 1/2 cups of the cheese and the parsley down the center leaving a 3/4 inch border all around. Starting at the long end, roll jelly-roll style. Press ends together to seal. Bake uncovered 45 minutes. Pour remaining sauce over meatloaf and sprinkle with remaining cheese. Bake an additional 15 minutes or until sauce is heated through and cheese is melted. Let stand at least 5 minutes before slicing.

MASHED CAULIFLOWER

1 1/2 lbs cauliflower cut into large florets
3 cloves garlic
2 cans low-sodium chicken broth
1/8 tsp salt
dash fresh-ground black pepper
2 tbsp chopped chives

In a large saucepan, combine cauliflower, garlic and broth. Be sure cauliflower is completely covered by liquid, adding water if necessary. Bring to a boil, reduce heat to medium-low and simmer until cauliflower is tender, about 12-14 minutes. Reserve 2 tablespoons of cooking liquid and drain remaining liquid off cauliflower. Transfer cauliflower and garlic to a food processor and process until smooth, gradually pulsating in the reserved liquid as needed to moisten the mixture. Season with salt and pepper. Top with chives. Serve warm.

A 1/2 cup serving of this mashed cauliflower has 6 grams carbs and 4 grams protein making it a good diabetic choice.

FRESH GREEN AND YELLOW BEAN SALAD

3/4 lb wax beans, trimmed
3/4 green beans, trimmed
2 cups chopped tomato
1 tbsp sherry vinegar
2 tsp extra-virgin olive oil
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/2 cup thinly sliced fresh basil
1/2 cup crumbled feta or bleu cheese

Cook beans in boiling water 5 minutes or until crisp tender. Drain immediately and rinse with cold water. Combine the tomato, vinegar, oil, salt and pepper in a small bowl. Pour beans into serving bowl, add tomato mixture and toss lightly. Sprinkle with basil and cheese.

Yield: 8 servings. Per serving: Approximately 67 calories, 9 g carbs, 3 g protein

DIABETIC FRIENDLY AMBROSIA

1 large can no-sugar added fruit cocktail
1 small can no-sugar added fruit cocktail
1 large can mandarin oranges
1 large can pineapple chunks in their own juice
1 medium sized carton sugar-free whipping cream
1/2 small bag miniature marshmallows
1/2 cup Splenda granular
1 tsp vanilla flavoring
1/2 cup finely chopped walnuts

Drain all fruit in a colander and rinse with cold water. Allow to drain until water is removed. Mix the whipping cream and gradually add Splenda and vanilla, using an elecric mixer. Mix until stiff peaks form. Add the fruit, marshmallows and nuts to the whipped cream mixture. Fold in with a large rubber spatula. Chill at least an hour before serving.

NOTE: While this is a diabetic friendly recipe, there is natural sugar in the fruit.

Large salads are perfect for any time of year. But they are particularly good for those hot summer days. These recipes are your days easier in the summer or any season. Fruit salad Lemon is fast, simple, but it makes a beautiful presentation and is perfect for picnics, step-in is great food, pool parties, etc. Quick and easy tuna salad and an appetizer or salad for lunch quickly at other times . Another good appetizer salad is the Thai beef salad.

FRUIT mysteriousSALAD

3 cups of various fruits
1 / 2 cup Miracle Whip or mayonnaise dressing
Lemon juice 1 / 2 cup flavored yogurt
1 / 2 cup chopped pecans
1 / 4 cup grated coconut

Combine salad dressing and yogurt. Stir and mix well. Place in a bowl, combine the assorted fruit, pecans and coconut. Pour the sauce over the top of the fruit mixture. Toss gently to combine.

TUNA quick and easy salad

1 package (12 ounces) mixed salad
1 smallCucumber, thinly sliced
1 cup steamed fresh green beans (green beans or 1 can, drained)
1 cup grape tomatoes
12-can of tuna, drained
1 / 2 cup feta cheese
1 / 2 cup ripe olives
Your favorite vinaigrette

Mix all ingredients except vinaigrette in a large salad bowl to. Drizzle with the vinaigrette. Serve with crackers or crusty wholemeal bread.

QUICK AND EASY Thai beef salad

1 package (16 ounces) coleslaw mix
1 small cucumber, thinly sliced
1 / 3 cupRice vinegar
3 tablespoons vegetable oil
2 tablespoons sugar
2 teaspoons reduced sodium soy sauce
3 / 4 pound thickly sliced ​​deli roast beef
fresh mint, chopped, for garnish if desired
chopped fresh cilantro, for garnish if desired

In a large bowl of cole slaw and cucumber salad mix to combine.

In a small saucepan, combine vinegar, oil, sugar and soy sauce. Bring to a boil. Condiment boiling water to cover completely the coleslaw mix and throw.
